Paleo-ish Ginger Chicken Salad with Lemon Mint Salad Dressing

I love listing all of the ingredients in a recipe’s name. It sounds so fancy 😉

La Tourangelle Pan Asian Oil

I found this ahhhhhmazing  oil on clearance at our grocery store today. After I whipped up this dressing, I googled to find out whether it fell within Paleo guidelines, and fail.

Oops.

Oh, well. It tastes phenomenal, and it’s still better for us than store-bought dressing. We just won’t be consuming it en-masse like we do coconut oil.

This recipe idea was sparked by a post on my friend Kym’s Facebook page yesterday for a fattoush with a mint dressing . I was making chicken salad today, and thought the lemon/mint combo would be really a really  fresh and light addition.
Lemon Mint Dressing

Dressing Ingredients:

.25 cup  La Tourangelle Pan Asian Oil

.25 cup olive oil

.5 cup lemon juice

1 TSP honey

1 TBSP minced garlic

Handful of fresh mint leaves

Salt and Pepper to taste

Mix with an immersion blender to get a fully emulsified and creamy dressing, or shake thoroughly for more of a vinaigrette feel. We’ve drizzled ours on a bed of kale and topped it with ginger chicken salad, and tossed it in some sliced cucumbers later.  SO good!

Cucumbers in lemon mint dressing

Ginger Chicken Salad

5 chicken breasts, baked { I used coconut oil, garlic, salt and pepper}

One yellow bell pepper

One green bell pepper

2 Honeycrisp apples

1 cucumber

3 stalks of celery

. 5 cup of PaleOMG’s  30 second mayo { I made this batch with half olive oil, and half coconut oil}

1 TBSP ground ginger {fresh would be AMAZING, though!}

Salt and Pepper to taste

I sliced all of our fruits and veggies in the food processor, and roughly chopped the chicken by hand. Mix well with mayo and spices, and devour!
